Holiday and New Year’s Cooking Tips

It’s the time of year to spread cheer with delectable dishes served to family and friends. We asked Eric Rippey, the Executive Chef at Torreon, for tips on cooking the perfect turkey for Christmas or New Years.

“Verify that your turkey is fully thawed before cooking it,” Rippey said. “Thaw it in the refrigerator and when it’s time to roast it, I always roast my turkey to 157° F. Then let it rest one hour for a perfectly moist turkey.”

He verifies the doneness with an instant-read thermometer.

“You want to cook your turkey until it is done and not a moment longer,” he said.

Additional tips include:

  1. Read the whole recipe and pre-measure all the ingredients before you start mixing everything. (Mise en place is a French culinary term for organizing and arranging ingredients before cooking.)
  2. Use dried beans as pie crust weights to keep the crust from bubbling up.
  3. Use corn syrup to have sprinkles stick to cookies.
